This is Champagne rosé built with intent, not just a pink dye job. Veuve Clicquot's 2012 Vintage Rosé blends Pinot Noir, Chardonnay, and Meunier from Grands and Premiers Crus with 13% still red wine from Bouzy, plus a portion aged in wooden foudres that adds a lightly toasted, spiced edge. Expect red berry and Morello cherry up front, saffron and pepper on the finish. Pour it chilled alongside smoked salmon or duck.
