Both come from sugarcane, but rum is typically distilled from molasses (a cooked byproduct), while cachaça must be distilled from fresh-pressed cane juice — and made in Brazil. The result is grassier, brighter, and more vegetal than molasses rum; its closest cousin is rhum agricole from Martinique.
