Most aged spirits lean on oak. This cachaça takes a different road, resting up to two years in Amburana, a Brazilian hardwood found only in Latin American forests. At Fazenda da Quinta north of Rio, hand-cut cane is pressed fresh, wild-yeast fermented, and single-distilled in a copper pot still. The wood lends juicy black cherry, spicy caraway, and warm cinnamon-and-nutmeg character at 40% ABV. Pour it neat to catch every note, or build a caipirinha with real backbone.
