Agave isn't a cactus — it's a succulent that takes anywhere from 6 to 30 years to mature. Mexico's diverse regions and 200+ agave species produce wildly different spirits depending on what's distilled, where, and how.

Tequila comes from blue agave in Jalisco. Mezcal can be made from over 30 species across nine states. Sotol uses dasylirion, a desert plant from Chihuahua. Raicilla is Jalisco's wild cousin to mezcal. Bacanora hails from Sonora's mountainsides.
