From Maison Hérout, a Normandy cidery farming organic orchards on the Cotentin Peninsula since 1946, this 2020 vintage extra-brut cider is pressed from more than 25 apple varieties, including Rouge de Cantepie. Naturally bottle-conditioned rather than carbonated, it pours gold to orange-yellow with a fine, persistent mousse. Expect a tannic backbone, a bracing bitterness, and subtle briny, iodized notes underneath. Serve well-chilled alongside Normandy oysters, charcuterie, or tripe for a taste of true Norman gastronomy.
