A medium-bodied wine, with a cherry flavor and hints of caramel and smoke. The wine has a refreshing acidity, and is very pleasant and enjoyable to drink. The grapes arrived to the winery in the early morning after being mechanically harvested. The stems were separated from the grapes and after a gentle pressing, the must was transferred with the skins and seeds into stainless steel tanks to begin fermentation. The fermentation lasts for 7 days, at a temperature of 25°C. After fermentation is complete, the wine is transferred to a storage tank and the skins are gently pressed to the same tank by a pneumatic press in order to begin malolactic fermentation (a fermentation process intended to stabilize and soften the wine). The wine is then matured in French and American oak barrels for 5 months.
