Piedmont's Cortese grape rarely gets this much respect — La Scolca changed that in 1966 when the Soldati family bottled Gavi dei Gavi from their oldest vines, some now over sixty years old, hand-selected cluster by cluster. The result: pale straw-gold with green glints, citrus and white flowers on the nose, a flinty edge, and a long finish of almond and hazelnut. Pour it chilled alongside grilled shellfish or a simple roast chicken.
