Wild-harvested from rocky Oaxacan mountainsides, Tepeztate agave takes fifteen to thirty years to mature—among the slowest-growing agaves used in mezcal. El Buho's Jimenez Mendez family, fifth-generation mezcaleros in Santiago Matatlán, triple-distills it in copper stills to coax flavor from its low sugar content. The result is an intense, earthen mezcal: think wet clay, green pepper, and stone minerality up front, unwinding into agave spice and exotic green fruit on a long finish. Pour it neat for sipping, or alongside grilled meats and citrus-forward ceviche.
