Bacanora is mezcal's lesser-known cousin — a Sonoran spirit that survived a 77-year ban by going underground, literally, with hidden stills on the Contreras family ranch. Fifth-generation producer Roberto Contreras still roasts wild Agave Angustifolia Pacifica in an underground pit for 36 hours, ferments it with local spring water, and double-distills it in a copper-topped alembic. The result: roasted agave, cinnamon, and mineral notes with a whisper of smoke. Pour it neat, sip slow, and taste a spirit that outlasted prohibition.
