Most mezcal comes from Oaxaca, so this one from the pine-forested highlands above Morelia, Michoacan is a change of scenery. It's made entirely from agave Cupreata by Emilio Vieyra, whose family has distilled here for five generations. The pinas roast for three days in a pit over lava rocks, then the spirit rests in glass six months before hand-bottling. Expect smoky-sweet agave, wet earth, citrus, and resinous pine bark. Pour it neat in a copita and take your time.
