Most mezcal comes from the classic espadín agave — Tobaziche goes off-script. It's made from wild Karwinskii, a tall, tree-like agave that can take around 16 years to mature in the Oaxacan hills. Del Maguey roasts the hearts underground, ferments in open wooden vats with wild yeast, and distills in copper. The result leans smoky and herbaceous, with eucalyptus, white pepper, soft minerality and a bright citrus finish. Sip it neat, slowly, with an orange slice on the side.
