Tepeztate is the patient one of the agave family — some plants take two decades in Oaxaca's wild Sierra Sur before they're ready to harvest. Maestro Celestino Sernas roasts the mature agave in an earthen pit, crushes it by tahona, then lets it ferment slowly in open pinewood tanks before a double copper-pot distillation. The result: citrus and white pepper up front, a jalapeño kick, gentle smoke, salt and earth underneath. Pour it neat in a copita and let it open up slowly.
