Most Espadín mezcals lean smoky — this one from La Noria, Oaxaca doesn't. Maestro Juan Pacheco Santos blends Espadín with rare Cuishe agave, roasting it 72 hours in an earthen horno before crushing it on a bull-pulled tahona wheel. Fermentation happens in cypress tanks near tropical fruit trees, whose native yeasts add depth. The result: floral, mineral, dry, surprisingly approachable. Pour it neat in a copita, or slow-sip alongside citrus and salt to let the green, earthy notes unfold.
