This one's for mezcal drinkers curious about agave beyond the usual smoke. The Producer blends Espadín (aged about 7 years) with wild-growing Cuishe (aged roughly 12), hand-roasted in an earthen oven and crushed the old way, by a bull-pulled stone wheel, before an 8-day ferment in cypress wood tanks. Double-distilled in copper stills, it comes out floral and mineral-driven, dry and earthy rather than campfire-heavy, making it the brand's most approachable pour. Sip it neat to catch the green, herbal edge, or build it into a simple mezcal highball.
