Here's a mezcal worth slowing down for. Tepextate is a wild agave that climbs almost vertically out of Oaxaca's rocky mountainsides, taking 18 to 25 years to ripen before palenqueros Rogelio Martinez Cruz and Leopoldino Miranda harvest it in Santa Maria Albarradas. Roasted, horse-mill crushed, naturally fermented, and twice distilled over wood fire, it pours light and bright: banana taffy and spun sugar on the nose, passion fruit, marzipan, cinnamon, and honeysuckle. Sip it neat, slowly, at room temperature.
