Named for the Zapotec bat god of night and the underworld, Camazotz is an unaged sugarcane rum from the Sierra Mixe highlands of Oaxaca. Maestro Leoncio Gaspar hand-presses local, pesticide-free cane, ferments it in open barrels with wild yeasts, and runs it through a small copper alembic still. The result: a clear, terroir-driven spirit with fresh cane sweetness, grassy and woody notes, and a lingering saline finish. Serve it chilled, straight, or in a simple daiquiri to let the cane character shine.
