Japan's craft gin scene has a standout in Ki No Bi Sei, the navy-strength expression from Kyoto Distillery. It's built on a rice spirit base and pure Fushimi water, with eleven botanicals including yuzu, hinoki cypress, gyokuro green tea, sansho pepper and bamboo, sorted into six flavor groups and distilled separately before blending.
