Meet a mezcal built from agave salmiana — a wild, slow-growing succulent that takes up to a decade to mature on San Luis Potosí's arid central plateau. Master mezcalero Juan José Hernández cooks the piñas in a clay oven for 48 hours, ferments with wild airborne yeasts in cement tanks, then double-distills in a copper onion-still. Expect herbal, bell-pepper aromas, jalapeño spice, and a mineral, faintly smoky finish at 42% ABV. Sip neat to explore its wild-agave complexity, or pour over ice for a smoky, savory margarita.
