In 1981, former investment banker Justin Baldwin planted Cabernet Sauvignon in Paso Robles' Santa Lucia foothills, back when the region was barely on the wine map — a gamble that helped establish it as serious Bordeaux-variety country. This Cabernet spends 14 months in oak, 25% new American, opening with red raspberry and black cherry laced with vanilla, soft herbs, and warming spice, then rounding into ripe plum, velvety tannins, toasted coconut, and fennel. Pour it with a grilled steak, burger, or roast chicken.
