Joel Gott's California Cabernet is a blend with a purpose: fruit pulled from Napa, Sonoma, Lake County, Mendocino, Lodi, and the Central Coast, each lot fermented separately before blending to balance the region's strengths. Sixteen months in barrel (about a third new American oak) rounds it into black cherry, toasted graham, and cedar notes with velvety tannins.
