Born from a happy accident, this añejo began as a botched barrel toast during Cambio's first test run with Jalisco's ZB Distillery — coopers over-toasted wood meant for a blanco, and the result was too good to waste. Rested 15 months in those barrels and bottled at cask strength (49% ABV) with zero dilution, it opens cognac-adjacent, with butterscotch, ripe pear, and white peach giving way to a spice-box finish. A tiny outturn of 1,000 bottles. Pour it neat, after dinner, for sipping slow.
Tasting notes
Leading with an almost cognac like nose of gently toasted French Oak deep roasted agave loads of spice tropical fruits on the mid palate, an incredibly long, lingering finish. Oak tannins and tons of texture create a palate sensory density uncommon to aÑejo tequila
