There's the black bottle, and then there's what's inside it. Cava de Oro's Extra Aged Añejo comes from El Arenal, Jalisco (NOM 1477), made from 100% blue agave under master distiller Alberto Partida. It rests in a blend of French and American oak, including casks that once held red wine, picking up cinnamon, caramel, vanilla, and a maple-syrup sweetness. Bottled at 80 proof. Pour it neat, give it a minute in the glass, and let the toasted spice unfold.
