London Dry gin is juniper-forward with a classic, crisp profile — think Beefeater or Tanqueray. New Western (or Contemporary) gin downplays juniper in favor of other botanicals like cucumber, rose, lavender, or citrus. Both are great; it depends on your flavor preference.
