Zancudo Tobala is a premium joven mezcal from Zancudo's palenque in San Dionisio Ocotepec, Oaxaca, Mexico, made from wild and cultivated Agave Potatorum harvested at roughly twelve years of age from the region's high-altitude yellow soil. As with the rest of the Zancudo range, the agave is pit-cooked with pine wood, milled by tahona, fermented with native yeasts in pine tubs, and double distilled in copper stills. Bottled at 45% ABV, it is more complex than the brand's Espadin, showing sweet and salty notes alongside cacao, subdued smoke, wintergreen, cedar and leather.
