You & Yours Distilling Co's Provisional London Dry Gin starts as their San Diego-distilled, grape-based London Dry — juniper-forward with blood orange, pink peppercorn, clove, orris root, and spruce tips — then rests roughly 60 days in previously-used single malt whiskey barrels. That barrel time layers in vanilla and brown sugar warmth over the classic piney juniper and citrus brightness, with clove adding a baking-spice finish. Each batch is numbered and tagged with its source gin and maturation details, so bottles vary slightly release to release. Best in a stirred Martini or an Old Fashioned riff where the barrel notes can stand out.
