Here's a mezcal with a backstory worth sipping over: the recipe dates to 1971, passed down to Yola Jimenez from her grandfather and now made by an all-women team in San Juan del Río, Oaxaca. Espadín and Madrecuixe agave get roasted in an earthen oven, crushed by tahona, and twice-distilled in copper pots. Expect peppered citrus, soft smoke, and a piney, full finish from that Madrecuixe.
