Echo Spirits | Elusive Herbal Liqueur
In 2023, not being able to serve a Last Word felt wrong in a proper cocktail bar — and there was no reliable substitute for one essential herbal liqueur. Derek Reno, our longtime Beverage Director, spent long nights experimenting, determined to craft a house-made liqueur with the same depth and complexity. What started as a behind-the-bar solution became a bottled herbal liqueur we never intended to share, but the response from our guests made it clear this was something worth putting in your hands, too. Inspired by traditional European herbal liqueurs, Elusive is crafted from over 25 botanicals, citrus peels, herbs, and spices to create a profile that's layered, balanced, and versatile: bright herbal notes and citrus peel on the nose, verdant botanicals, citrus oil, and warm baking spices on the palate, and a clean, lightly bitter, lingering finish. Bright enough for cocktails, structured enough to stand on its own — reach for it in a Last Word, a Piña Verde, or a Champs Élysées, or sip it neat. Bottled at 90 proof, Elusive took Double Gold at the 2026 San Francisco World Spirits Competition.
