Where It Started

Echo Spirits began the way a lot of good ideas do - without a clear plan, but with a lot of curiosity.

Founders Joe and Nikhil graduated into the late-2000s recession with time on their hands and a growing interest in how drinks were made. What started as homebrewing turned into a deeper obsession: beer became mead, mead became wine, wine became sake, and eventually, distillation.

They had no background in manufacturing or hospitality. What they did have was a willingness to figure it out—through trial and error, long nights, and a lot of stubbornness.

After years of learning, visiting distilleries, and asking questions, they decided to go all in. In 2019, Echo Spirits opened its doors in Columbus, Ohio.

What started as curiosity became craft. What started as a hobby became something people could experience.

3/4 oz London Dry Gin (A juniper-forward gin holds up best against the complex botanicals)
3/4 oz Echo Spirits Elusive Herbal Spirit
3/4 oz Maraschino Liqueur (such as Luxardo)
3/4 oz Fresh Lime Juice
Garnish: Brandied cherry or a lime twist

Instructions

Combine the gin, Elusive Herbal Spirit, maraschino liqueur, and fresh lime juice in a cocktail shaker.
Fill the shaker with ice and shake vigorously for 10–15 seconds until well-chilled.
Double strain (using a Hawthorne strainer and a fine mesh conical strainer) into a chilled coupe or Nick & Nora glass to keep out the ice shards and lime pulp.
Garnish by dropping a brandied cherry into the bottom of the glass or expressing the oils of a lime twist over the top.

Tasting Notes The equal-parts ratio maintains the perfect tension between the sharp acidity of the lime, the dry sweetness of the maraschino, and the high-proof botanical kick of the gin and herbal spirit. The Elusive spirit cuts through slightly less syrupy than traditional Chartreuse, making this iteration particularly bright and refreshing.
