Xicaru means "beautiful" in Zapotec, and this joven mezcal earns the name honestly. Master Mezcalero Fernando Santibanez makes it in small batches at a Matatlan palenque, using his grandmother's recipe and 100% espadin agave roasted in a conical stone oven over mesquite and ocote. Crushed by tahona, fermented in pine, and double-distilled in copper, it opens earthy, turns to citrus and green maguey, then finishes clean with gentle smoke. Sip it neat, or let it carry a smoky cocktail.
