Barrel-aged mezcal is its own quiet corner of Oaxaca, and Xicaru's Añejo lives there beautifully. Made from 100% espadín agave at Fernando Santibañez's palenque in Matatlán, it's roasted, crushed by tahona stone, and double-distilled in copper before resting at least a year in medium-toast American oak. That time softens the smoke into vanilla and gentle oak that trade off with the maguey. Bottled at 86 proof. Sip it neat, slowly, and let the campfire notes stretch out.
