Sacramento's first legal distillery since Prohibition built this one around the city's own contraband history — "Wheel House" honors the riverboat captains who ran moonshine from the boat's wheelhouse when the law said they couldn't. Gold River Distillery's absinthe verte sticks close to the classic trinity of grande wormwood, anise, and fennel, then goes through a second maceration with lavender, star anise, cinnamon, and spearmint for depth.
