Wanderback isn't a distillery in the usual sense — founder Phil Downer sources unaged single malt from Seattle's Westland Distillery, then ages it on his family's cherry and apple orchard farm in Hood River, Oregon. Batch No. 2 spends at least three years in new American oak before six months finishing in Nicaraguan ex-rum and Heaven Hill ex-bourbon casks, landing at 100 proof. Expect chocolate, gingerbread, and orange marmalade with a rum-tinged finish. Pour neat to watch the two cask characters trade off.
