Named for a pilot's flight, this añejo takes a detour: two years resting in Napa Valley red wine barrels instead of the usual bourbon or French oak. The result shows on the nose — toasted agave and papyrus give way to a palate of melon, apple, and grape, with chocolate and cherry threading through a long, dried-fruit finish. Made from fully mature blue weber agave, slow-cooked in clay ovens, fermented, and twice distilled in copper pot stills. Pour it neat in a wide glass and let the wine-barrel character unfold.
