Made at El Pandillo in the Los Altos highlands, Volans Reposado follows a wonderfully old-school path: estate blue Weber agave, slow-cooked in brick-lined ovens, then crushed by a 20,000-pound mechanical tahona. It's additive-free and rested in ex-bourbon barrels, which brings out a buttery mouthfeel with cooked agave, minerals, citrus, pear, oak, and a whisper of caramel and baking spice. The finish leans gently peppery. Sip it neat to catch every layer, or build a thoughtful sipping margarita.
