Here's a blanco with real distilling pedigree: Volans comes from NOM 1579's El Pandillo in the Los Altos highlands, where master distiller Felipe Camarena works 100% Blue Weber agave grown high above Jesús María, Jalisco. It's tahona-crushed and blended with three waters, then aerated to soften any harshness — additive-free, start to finish. Expect sweet cooked agave, Meyer lemon, white pepper and a crisp mineral streak. Pour it neat over a big cube, or let it carry a bright margarita. Sip Something New.
