Bastrop, Texas earned its place on the absinthe map when biochemist-turned-distiller Matt Mancuso released the state's first legally made absinthe. Emerald is built from a thirteen-herb blend — anise, fennel, grand wormwood, hyssop, cardamom, and peppermint grown in Mancuso's own garden — run through 55-gallon batches at 140 proof. Licorice and green pepper lead the palate, easing into a golden-raisin sweetness, while a slow water louche unlocks honeysuckle and fresh-cut hay. Pour it the traditional way: ice water dripped over a sugar cube, and let the ritual do the rest.
