Grand Cru Chouilly Chardonnay from Vazart-Coquart, blended across many vintages and given nine years in the cellar before release. Dosed at 30 g/l, which makes it a Sec rather than a Brut — brioche and candied citrus, with enough acidity underneath to carry the sugar. The house built it for foie gras.
