Pechuga mezcal traditionally hangs a raw chicken breast in the still during a final distillation, and Tío Rey's version leans all the way into the ritual. In his remote Sola de Vega palenque, he distills Bat-Friendly espadín in clay pots, then runs it again with apples, pineapple, banana, tejocotes, raisins, cinnamon and cacao. The result is chocolate-forward on the nose, rounded with sweet fruit and spice. Sip it neat, slowly, alongside an orange slice.
