Pechuga mezcal earns its name from an unexpected step: during the second distillation, mezcalero Joel Barriga Aragón hangs a farm-raised chicken breast in the still alongside apples, pineapple, banana, tejocotes, corn, and sugar cane. His Espadín grows in Bat Friendly-certified fields near Tapanala, roasted in an earthen oven and crushed by a horse-drawn tahona. The result is bright and gently smoky, with ripe fruit, citrus, and soft spice. Sip it neat, slowly, at room temperature.
