Pechuga is mezcal's celebration bottling, and Don Emigdio Jarquin makes one of Miahuatlan's most respected. His espadin is crushed under a 4,000-pound limestone tahona pulled by oxen, then distilled a third time with a basket of apples, pineapple, guava, banana, tejocotes, cinnamon and raisins, plus chicken and turkey breast suspended in the vapor. The fruit and savory notes fold into the smoke rather than dominate. Bottled around 51.6% ABV. Sip it neat and slow, at room temperature.
