Third-generation mezcalero Joel Barriga distills this Mexicano at Rancho Tapanala, his family's palenque set high in Oaxaca's Sierra Sur atop the ruins of an old hacienda. Piñas from wild Maguey Mexicano roast slowly in earthen pits, get crushed under a stone tahona, then ferment with spring water drawn above the property before two passes through a wood-fired copper still. The result carries the varietal's signature smoothness — anise, ripe fruit, and a whisper of smoke. Best sipped neat to let each pass of the still speak for itself.
