Named for a Oaxacan elder who inspired its founders, El Viejo is a joven mezcal built from Espadín and wild Tobalá agave, some plants left to mature 8 to 14 years before harvest. The piñas roast in underground pits, then crush under a stone wheel, giving a smoke that never overwhelms. Expect roasted agave and warm cinnamon on the nose, a buttery, stony palate, and a finish of pink pepper and cocoa. Pour it neat, or build a spirit-forward cocktail around it.
