Three Cuts Gin's Pinot Barrel Rested begins as the distillery's Founder's Release — juniper, coriander, lime, cinnamon bark, and their signature three cuts of rose — then rests in ex-Tasmanian French Oak Pinot Noir barrels. That maturation deepens the color and builds cassia and sweet spice on the nose, with Christmas cake, plum, and a whisper of coffee on the palate, finishing long with baked citrus. Distilled by Turner Stillhouse in Rosevears, Tasmania. Try it neat over ice, with dry ginger ale, or shaken into a Negroni.
