Maestro Juan Pacheco Santos grows and distills this joven in Ejutla La Noria, Oaxaca, roasting the agave over huamuchil wood in an earthen horno for 60 hours, then fermenting in cypress tanks before a double copper pot-still run. The result is bright and vegetal with gentle smoke, citrus, earthy minerality, and a whisper of spice at 44% ABV. Pour it neat, or build a cocktail that wants real backbone.
