We make it using old school techniques, like using a column still to layer our botanicals in just the right order and quantity. We heat the spirit to its boiling point and the vapor passes through the botanicals, taking on all their flavors. Then we cool the vapor and it turns back into liquid, to become The Old G. We distill the spirit 9 times to make it as smooth as possible. We then aerate the gin for 2 days until it’s ready for the people.
