The Lost Explorer 12 Year Artesana Salmiana Mezcal is crafted in San Pablo Huixtepec, Oaxaca, by maestro mezcalero Don Fortino Ramos, using wild Agave Salmiana harvested at full maturity after 12 years. The piñas are cooked in earthen ovens, naturally fermented with wild yeast, then double-distilled in small batches through copper alembic stills. Expect green chili and grapefruit peel on the nose, a sweet citrus-and-dried-herb palate, and a spicy, mineral finish. Sip it neat to track the shifts, or pour it into a spicy mezcal margarita.
