The name says it all: in 2004, founder Jonathan Pey tasted a barrel of Oakville Cab so true to form he called it "textbook" — and the name stuck. This bottling blends Cabernet Sauvignon with small amounts of Merlot, Cabernet Franc, Malbec, and Petit Verdot, sourced across Oakville, Yountville, Oak Knoll, and Calistoga, then aged 16 months in French oak. Expect wild blueberry, blackberry jam, and mocha with firm, structured tannins. Pour it alongside a well-marbled ribeye.
