Volans No. 1 comes from the El Pandillo distillery in the Jalisco highlands, where Felipe Camarena's estate Blue Weber agaves grow in iron-red soil at nearly 6,900 feet, then rest six years in lightly charred American white oak bourbon barrels. Expect floral aromas giving way to dried fruit, baking spice, chocolate and salty caramel, with vanilla and mature agave on a long finish. Pour it neat and slow, when the moment calls for something contemplative.
