Siete Leguas made this blanco to mark seventy years of doing things the slow way, and it shows. It's distilled from Agave Criollo, a smaller, more concentrated relative of blue Weber, cooked in stone ovens and crushed under a tahona stone wheel before twice-distilling in copper pots. At 42% ABV, the nose leans into cooked agave, minerals, white pepper and a floral lift. Pour it neat in a small glass and let the earthy, herbal side unfold slowly.
