Their fix: dial juniper way back, lean into citrus peel, cardamom, and licorice root. Juniper berries macerate overnight in the pot still while the rest of the botanicals get vapor-infused through a Carter Head column. The result at 84 proof is bright citrus up front, floral through the mid-palate, and a long, spicy finish. Try it in a gin and tonic with grapefruit.
