Bacanora is Mexico's other agave spirit, made only in Sonora from wild Agave Pacifica—a spirit once prohibited that survived in Sonoran family celebrations anyway. Sunora roasts the piñas in lava-rock ovens fired with pecan wood, ferments them in oak tanks with water from the Rio Zanjon Aquifer, then runs everything through handmade copper pot stills. What lands in the glass: fresh agave up front, mineral and peppery through the middle, smoke and earth on the finish. Sip it neat, or swap it into a margarita for something different.
